Cassia gum is a high-molecular-weight polysaccharide composed of galactomannan. It's a natural ingredient, which is used as thickener, moisture retention agent, stabiliser, emulsifier and texturising agent in the manufacture of wet pet food.
Indian company LubiGel has been producing various grades of cassia gum. The products are soluble in hot water and require heating to fully solubilise and reach full viscosity in aqueous solutions. Combined with other hydrocolloids, cassia gum will synergistically form superior gels, which act as a good replacement solution for expensive locust bean gum and konjac gum. It also acts as a partial replacement for expensive carrageenan.

Food-grade cassia gum comprises 75 per cent polysaccharides by weight. This makes it highly soluble in hot water to form superior gels when combined with kappa carrageenan/xanthan gum. This synergy gives a better texture and stability to the finished products. It also enables good cost savings, as it allows a partial replacement of carrageenan-based formulations. Likewise, it enables good cost savings as a substitute for very expensive locust bean gum and konjac gum in pet food formulations.

Cassia gum is approved due to its wide regulatory acceptance in the EU (E427/1f499), Japan, Korea, the USA, Russia, Latin America, and Canada.
